El Chemex Brewer fue inventado por Peter Schlumbohm en 1941 en Chicago, EE. UU. Siendo químico, Peter entendía muy bien la extracción del sabor y la cafeína. Esto hizo que el Chemex no solo sea una pieza de diseño hermosa, sino también funcional; probablemente por eso forma parte de la exposición permanente del MoMA en Nueva York.

El papel utilizado para los filtros Chemex es ligeramente más grueso que la mayoría, lo que produce cafés increíblemente limpios, pero requiere una molienda un poco más gruesa.
