Pa-O è un lotto a processo naturale, proveniente dai villaggi Pa-O, a Pinlaung. Il caffè è stato coltivato da agricoltori in 5 diversi villaggi, prima di essere selezionato e lavorato nel mulino Behind the Leaf.
