La Chemex è stata inventata da Peter Schlumbohm nel 1941 a Chicago, USA. Chimico di formazione, Peter conosceva molto bene l'estrazione del sapore e della caffeina. Questo ha reso la Chemex non solo un bellissimo oggetto di design, ma anche funzionale – probabilmente per questo fa parte della collezione permanente del MoMA di New York.

La carta utilizzata per i filtri Chemex è leggermente più spessa della media, il che produce estrazioni incredibilmente pulite, ma richiede una macinatura leggermente più grossolana. Per questo motivo è meglio macinare i chicchi appena prima di preparare il caffè. Conserva i chicchi interi in un sacchetto richiudibile a temperatura ambiente.
