케멕스 브루어는 1941년 미국 시카고에서 Peter Schlumbohm이 발명했습니다. 화학자였던 Peter는 맛과 카페인의 추출 과정을 매우 잘 이해하고 있었습니다. 그 결과 케멕스는 아름다운 디자인일 뿐만 아니라 기능성까지 갖추게 되었습니다. 아마도 이것이 뉴욕 MoMA의 상설 전시품 중 하나인 이유일 것입니다.

케멕스 필터에 사용되는 종이는 일반 필터보다 약간 두꺼워 매우 깨끗한 추출물을 만들어 주지만, 약간 더 굵은 분쇄도가 필요합니다. 그러므로 커피를 내리기 직전에 원두를 갈아주는 것이 가장 좋습니다. 통원두는 지퍼백에 밀봉하여 실온에 보관하세요.
