De Chemex-brouwer werd in 1941 uitgevonden door Peter Schlumbohm in Chicago, VS. Als chemicus begreep Peter de extractie van smaak en cafeïne heel goed. Dit resulteerde erin dat de Chemex niet alleen een mooi ontwerp is, maar ook functioneel – waarschijnlijk de reden dat het deel uitmaakt van de permanente tentoonstelling van het MoMA in New York.

Het papier dat voor Chemex-filters wordt gebruikt, is iets dikker dan de meeste, wat zorgt voor ongelooflijk schone zetsels, maar een iets grovere maalgraad vereist.
