Pa-O er et naturligt forarbejdet parti fra Pa-O-landsbyerne i Pinlaung. Kaffen er dyrket af bønder i 5 forskellige landsbyer, før den blev sorteret og forarbejdet på Behind the Leaf-møllen. Profilen er dyb og frugtig med en sød, syltet karakter, der er smukt afbalanceret.
