Nach der Ernte wird Koji – ein auf Reis wachsender Pilz – zu den Kaffeekirschen gegeben, um die Fermentation zu unterstützen. Das Ergebnis ist ein Profil mit unglaublich tiefem Geschmack und einer besonderen Textur.

The koji process gives this gesha a sweetness I've never tasted in a Colombian coffee—it's like honey and ripe fruit folded into the cup. Brewed it on my V60 and the clarity at 1500 meters really lets the varietal shine through. Easily the most unique filter coffee I've had this year.
