Santa Irene liegt mitten in einem geschützten Naturwaldreservat, das sich über 12 Hektar erstreckt. Im Jahr 2012 begann Carlos, 15 Hektar Land zu bewirtschaften, zunächst mit nur wenigen Kaffeepflanzen. Die Niederschläge in dieser Region Guatemalas sind landesweit als „chipi-chipi“ bekannt – ein feiner Nebel, der die Landschaft kühlt und die Reifung der Kaffeekirschen verlangsamt, was zu einer außergewöhnlichen Geschmackstiefe führt.
