Nuestro último lote de nuestro amigo Mauricio de Finca Himalaya. El Maragogype es uno de los 'tres grandes' cultivados en la finca, junto al Pacamara y al Maracaturra. Aunque produce bajos rendimientos, el sabor excepcional de los granos grandes hace que todo el esfuerzo valga la pena.
Este lote natural de secado lento ofrece un delicioso sabor afrutado, con bayas dulces y suaves notas tropicales.
The low yield on these Maragogype beans really shows in the cup—each batch feels denser and more concentrated than standard lots. I brewed a pour-over this morning and the body was surprisingly thick for a washed process. Definitely a treat worth the extra cost.
