Santa Irene se trouve au sein d'une réserve forestière naturelle protégée de 12 hectares. En 2012, Carlos a commencé à travailler 15 hectares de terrain, en commençant par un peu de café. Les précipitations dans cette région du Guatemala sont connues dans tout le pays sous le nom de « chipi‑chipi » – une fine bruine qui rafraîchit le paysage et ralentit la maturation du café, créant une profondeur de saveur exceptionnelle.
