Santa Irene ligt te midden van een beschermd natuurlijk bosreservaat van 12 hectare. In 2012 begon Carlos met het bewerken van 15 hectare grond, te beginnen met een beetje koffie. De regenval in dit deel van Guatemala staat in het hele land bekend als 'chipi-chipi' - een fijne nevel die het landschap afkoelt en de rijping van de koffie vertraagt, wat zorgt voor een uitstekende diepte van smaak.
