For the very first time, we are sharing the Papayo varietal - a must-try for those in search of innovative Colombian flavour. After two stages of fermentation, this lot is like a sweet tropical cocktail.
The Papayo varietal is genuinely something special—the cup has this rich, layered sweetness I haven't found in other Colombians. Brewed it as a pour-over this morning and the aroma alone convinced me to order another bag before I'd even finished the mug.
I was skeptical about a new varietal from Colombia, but the Papayo lives up to the hype — the cup is surprisingly sweet with a clean finish that lasts. Even brewed as a simple pour-over, it's easily the most interesting coffee I've had this month.
That first sip hit different—the Papayo varietal has this smooth, almost creamy body that I wasn’t expecting from a Colombian filter roast.
