I brewed this as a pour-over this morning and the natural process really shines through — it’s sweet and clean, no bitterness even as it cools. The Catuai varietal from that high Tarrazu altitude gives it a depth I haven’t found in cheaper bags.

My first brew was at 1950 meters from Tarrazu, and the natural process on this Catuai brings such a sweet, syrupy body that I've already ordered another bag.

The natural process on this Catuai really shines through at 1950 meters—I've brewed a few cups as filter and each one has that clean, fruity brightness Tarrazu is known for. Diego Hidalgo's lot arrived with a roast that's dialed in perfectly for pour-over.
