På den berømte Volcan Azul-ejendom i Costa Rica har producenten Alejo introduceret moderne fermenteringsmetoder for at opnå en ekstraordinær smag. For første gang nogensinde er vi glade for at kunne præsentere H1-sorten. Fermenteret under 'varme anaerobe' forhold er dette en kaffe med tropiske frugter og funklende sødme: et must for dem, der søger vores funky profiler!
The modern fermentation methods really come through in the cup—it's unlike anything I've had from Costa Rica before, with a bright, clean finish that lingers nicely. This is my second bag and it's consistently impressive.
The tasting notes unfold in layers I didn't expect from a coffee—one minute it’s bright and fruity, the next it’s deeply complex. The fermentation really does bring something new to the cup, and it’s easily the most interesting brew I’ve had this month.
Alejo's modern fermentation approach gives this coffee a complexity I've never tasted from Costa Rica before—it's sweet, almost wine-like, yet still super clean. I brewed it as a pour-over and the aroma filled my whole kitchen before I even took a sip.
