収穫後、米に生える麹菌をコーヒーチェリーに加えて発酵を促進します。その結果、非常に深い風味と独特の食感を持つプロファイルが生まれます。
The koji process gives this gesha a sweetness I've never tasted in a Colombian coffee—it's like honey and ripe fruit folded into the cup. Brewed it on my V60 and the clarity at 1500 meters really lets the varietal shine through. Easily the most unique filter coffee I've had this year.
The filter roast handles beautifully—no bitterness, and the Gesha’s floral notes really come through at 1500 meters. The koji fermentation adds a subtle, sweet complexity I haven’t tasted in other Colombians. Finished the bag faster than I’d like to admit.
