The carbonic maceration really comes through—there's a bright, almost wine-like acidity that cuts through the filter brew beautifully. I've brewed three cups this week and each one has that same clean, juicy finish you'd expect from a Bali lot.
The altitude and the S795/Kartika varietals really come through—there's a clean, bright acidity that feels like it was grown at 1200 meters. Brewed it as a pour-over and the cup stayed sweet even as it cooled, which I never expect from a coffee this processed.
The carbonic maceration process gives this filter roast a surprisingly clean, syrupy body that I wasn’t expecting from a 1200-meter coffee. Brewed it in my V60 and the cup stayed sweet from first sip to last.
