Voor de allereerste keer delen wij de Papayo-variëteit - een must-try voor wie op zoek is naar innovatieve Colombiaanse smaak. Na twee fermentatiefasen is deze partij als een zoete tropische cocktail.
The Papayo varietal is genuinely something special—the cup has this rich, layered sweetness I haven't found in other Colombians. Brewed it as a pour-over this morning and the aroma alone convinced me to order another bag before I'd even finished the mug.
I was skeptical about a new varietal from Colombia, but the Papayo lives up to the hype — the cup is surprisingly sweet with a clean finish that lasts. Even brewed as a simple pour-over, it's easily the most interesting coffee I've had this month.
That first sip hit different—the Papayo varietal has this smooth, almost creamy body that I wasn’t expecting from a Colombian filter roast. Brewed it in my pour-over this morning and the cup stayed sweet and clean all the way down, no bitter tail at all. Definitely glad I grabbed this one before it
