Working closely together lets us highlight the amazing terroir of Apaneca, sharing exciting lots that never disappoint. Moe is continually experimenting with process and varietal, and this plush Pacamara lot is real standout for the season.
Brewed this as a pour-over this morning and the body was so silky it almost felt creamy, which I didn’t expect from a washed lot. Moe’s work with the farm really comes through in how clean and sweet the cup stays from first sip to last.
The Apaneca terroir really shines through with this lot—it’s got that clean, bright acidity I look for in a breakfast cup. Brewed it as a pour-over and the sweetness lingered nicely into a long, smooth finish.
