The washed Bourbon process really lets the sweetness come through—I pulled a shot this morning and the crema was thick and lasted long after the cup settled. It’s smooth enough for a daily espresso without any harsh bite.
The washed process really lets the Bourbon varietal shine—my shot pulled thick and syrupy with a clean finish that lingered just right. At 1700 meters, you can taste the altitude in the bright acidity, and it held up beautifully as a cortado.
The caramel sweetness from this washed bourbon cuts right through the milk in my morning cortado, and the 1700-meter altitude gives it a bright, clean finish. Ground it this morning and the aroma alone told me I was in for something special.
